I have not stopped blogging…
But…was too busy to blog then..
Work has been piling up since Nov for Year End closing..
Work nonstop till 10plus 11plus daily.
Weekend is for me to catch up my sleep & have some R&R sessions.

Hmm..doubt still got people check out my blog..
Nvm la..blogging is for my own collection & for food recommendations..=)

Well hope this is not too late yet.
2010 has been a great year for me..=)
My ICookUEat sessions have been successful so far. Since June, I have done 7 sessions.
And in 2010, I whipped up a few dishes for xmas..

It was my first time doing xmas party..=)
I have invited a whole load of friends over and am glad it was successful!!!!
Since it was a potluck, every each of us brought some share of food.
As for myself, I have prepared 3 dishes and another contributed by my mum..

These are the people that have made their way to my place for my xmas party! ^^

But do take a closer look. All of the dishes so got “xmas feel”..except the rojak on the left..

Yeah..first time get to have angelhair that have more “LIAO” than angelhair..
But it was fantastic!real spicy!!!!

I am proud to know that all my friends are loving it!!! I was so afraid that I couldnt do this well & ruin the whole xmas. But, seeing it slowly form up to what I want it to be, I felt so satisfied. My face was filled with grins when my friends praised and finished it all in minutes. ^_^

My first xmas party is a big SUCCESS! Everyone enjoy their food, alcohol and games.
Most importantly, I am glad that all my friends are such a good host to one another.
They come from all different group but well..alcohol bring people together.
I absolutely have no doubt in that.

 

We headed for more fun @ Mount Faber Safra K-Box after that. We sang and danced with the songs. Load of fun together!! ^_^
Probably my best xmas!!!!!!! =)

 

As I am going into my quarter century old stage, I am thinking…
“Will we still be able to have this kind of party when we have kids and family?”
My answer is no i guess…unless the kids are with the grandparents. lol~

 

Well, this fact made me more appreciative  of the fun I am having now.
A good feeling that I will cherish.

It has been tough getting a theme for my cooking session.
Not only I have to think about the difficulty level of the dishes but also brood over the ingredients.
It get harder when the cuisine is not so commonly made in Singapore.

Well, I still take up the challenge to try out “MEXICAN”.
I do love mexican food and hopefully I can whip up something as good as theirs too!
For that, i cracked my brain, flipped the cookery book and decided on the few…
This time round, I invited my fellow uni mates to be my guinea pigs!!!!
Trust me, every session is as nervous as the previous one.
I was so afraid that I will screw things up..

And I always did. Yes on dessert again!
Certainly have no talent in dessert..
But for the rest, it’s alright but lot of room for improvement~


NACHO

FAILED! The cheese just won’t melt~! Crap. =_= But the minced chix is not too bad. Thanks to the taco seasoning and salsa sauce! Yes, Yongxiang helped me to get it. Thanks man!

Beside that, I think it failed terribly. A simple dish but.. =( why the cheese cant melt? Should have done the cheesy nacho sauce instead of using cheddar cheese slices.. =(
Oh well…

Mexican Meatball w Chipotle Sauce
Chiopotle sauce is actually come about by the use of chipotle peppers and the sauce to mix with tomato and other ingredients. It is suppose to add on to the spiciness in the food. Well, I added more it was stated but it wasnt that spicy.  I like the meatball. It tasted abit like german sausages. Sounded wrong but it is indeed! Guess the oregan, a form of spice, give the minty tasting. Overall, my friends love it. And they commented the mexican red rice was not bad. They commented it is better than NANTO’s. See that? BETTER leh~~~ai sey~~What’s a ego boosting line!
But I think the rice is no good. I purposely added some raisin to enhance the taste.
Still, I am glad my friends love it!

Chocolate Mousse

Oh dear~This is bad. I am bad with dessert. Totally 0 talent.
But..edible. I tried my best.

Oh well, luckily for me the food din turn out really bad. But, I guess I need more practice. Wooo~Cant wait for the next session. adrenaline racing up as I thought about it.

ICookUEat@Session 4

Session 4.
1 word “HAPPENING”.

My dearest jiemei want tiramisu. Yes, shock of my life.
I have never never never ever made any cake before, beside those in the toilet! LOL~
But..I took up the challenge.

It’s an expensive challenge. Just the mascarpone cheese cost a bomb. Gosh.
To make the freshest and nicer tiramisu, I decided to make it the night before.
I started around 1am..after the success of my seafood pasta salad.

Everything looks fine after the cream’s turn to be mixed.
I opened the bottle and came out as a big lump. Not to usual cream.
I tried to mix it with my mini mixer. And guess what? Nothing happen. Still a lump.
I went back to my pc and took a close look at the youtube video.

=_= Cream is watery form. I looked at the bottle. Pure Cream.

I thought Pure cream = cream.lol~now i know it’s different. LOL~

Panicky. At 2am. Where to find cream? Almost wanted to give up.
I am so thankful that I got a driving license. Really.Otherwise, say sayonara to tiramisu & $.
Drove down to my nearest 24-hr mart to get it. Wah..still thankful abt my license. lol~

Reached home. And a cockroach jumped on me to welcome me!
Scared me la!!!!!!!!

Proceed on with my 2nd trial.
15min. 30min. 1hour..
Still in watery form with some lump forming =_=
Separate the lump from the liquid and continued to beat n finally..some creamy cream formed!

Threw back the liquid.
30mins. nothing happen. I was going crazy then.
And time checked – 4am =_=

Desperate. Went online & found Jerome, my sec sch puppylove! He’s a baker and boss of a cake shop now.
Luckily! He passed me some knowledge.hahaha..
Now i know whipping cream needs to be whipped when it is cool!
Continued my task. My beater was mini-sized. Took ages.

By the time everything was done, it was around 5plus in the morning.
I was pek-chek enough. I stopped following the receipe and do my way.
I add bit and bit of the bailey flavoured mix. Taste le. Alcohol level not shiok.
So..I just took the bottle of bailey and poured in to my cheese and cream~

I just love my “JUST DO IT” Attitude.
And the final product…

Chilled Tiramisu

Yes. Thick layer of creamy cheese mix. I am so loving it. The alcohol level is just right.
Shiok! Ya just right for alcoholic me! My jiemeis commented it’s not bad. Very creamy~
*CLAP CLAP*

Next up.

Seafood Pasta Salad

My jiemeis are loving it!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!
I made a huge tub and they had quite a number of servings!!!!!!!!!!
Cheryl commented it tasted similar to those served in Aston’s!!!!!!! ^_^
YEAH~~~~

Potato Pie!

To save time, I got myself a ready-made pastry skin.  Imagine I already have problem rolling out the skin, what more to say about making it from scratch…=_=

But everything else it’s done by me ok! The minced chix sauce. The mashed potato blah~
And it turned out to be great! Everyone had 2 each! I was so happy then! Everyone go “hm. Nice!” & grab for 2nd pie. ^_^

It’s fulfilling. I almost got scalded by the hot butter+milk when the pan overturned. Ya, it was spoilt and I have no idea about it. Yea, talking about the fact that those r my home cooking utensil. =/ Luckily for me, it only cause the whole kitchen floor to be oily and greasy.

Well, alot of dramas but glad all went well!!!!!! I have more confidence in my cooking now!

ICookUEat@Thai Food

Once again, kuraprincess took up the culinary challenge.
And this time round, she has chosen THAI food.
Thai food really gave her a real good time. You bet.

It wasn’t as successful as the previous 2 sessions.
Well, i underestimated the preparation time and has little confidence in it.
I can easily screw up the dishes by adding the wrong amount of seasonings and blah.

And the chilli padi, gave me a real PAINFUL experience.
I scooped out the seeds with my bare fingers…
And guess what?

My whole hands were on “Fire” and swollen…
My mum told me to rub salt onto my hand to get rid of it.
I almost do my swearing at her! It was like rubbing salt onto bare wound la!
The pain totally spolit my cooking mood.
But fortunately, everything are still served at its edible state..lol~
This time round, I have invited my canoiest over.
A time to catch up and taste my cooking. =)

Thai Minced Pork With Basil

I thought this dish turned out pretty not bad. Adequate spiciness and seasoning. The basil made the whole dish got the very “THAI” feel. I have added long beans to make it “healthier”. lol~ Personally, I fancy this dish. The egg goes damn perfect with the fish sauce. Yes, they are so much better than dipping it with light soya sauce. Yes better. Especially when the yolk was still creamy, the taste was perfect.

My friends think it was not bad too. =)

Ingredient u need:

– 500gram of minced pork
– Basil leaves (holy basil)
– Oyster sauce
– long beans
– Chilli padi & garlic
– Fish sauce (To add “saltiness” to the dish)
– Pinch of salt

Tom Yum Soup

Oh.The tom yum soup certainly need alot of improvement. It didn’t turn out bad but I am unsatisfied with it. Not soury enough. Spiciness was “up”. Abit too watery. =(
Ingredient you need:

– Seafood
– Straw Mushroom
– Onion
– Lemongrass, blue ginger, lime, lime leaves, chilli padi
– Fish sauce

Besides the basil pork and tom yum, I made lemongrass drink too. Pretty easy drink to make. Refreshing. =)

This time round, I challenged myself with Japanese Curry Katsu Rice.

I was so thrilled!!! I was so worried that it might not turn out well. Worried the katsu not cooked. Worried the curry won’t turn out well and blah blah blah.
But gladly, it turned out fine! They commented that it tasted same as what they had outside! ^_^
With these encouraging comments, I was smiling all night long. =)
